Culinary Students--Freelance work for Graduation, see Chef Dawn ASAP! From Chef Dawn: Hi Students, I offered to oversee the graduation hors d'oeurves which popped up today and was wondering if any of you can help me. I need help selecting a small group of about 12 students who will be able to prep, set up and execute over TH/Fri/ for the function SAT. I believe graduation is at noon and the reception follows for no more than 1.5 hours afterwards at the law school for 350 ppl. I want it to be nice yet simple and appropriate. I need to pull a team and menu together THU June 10 and can do some via phone. If you are interested or have any suggestions, please contact me asap tomorrow before 9 or after 10(I have a doctors appt). Here's what I'm thinking:4 "action" stations featuring student work, a single petite offering at each station. 6-8 passed hors d'oeurves/canapes such as:BLT bite -brioche, fried quail egg, apple smoked bacon, frisee, sliced grape tomatotryropita-cheese pie in filo etc.nice artful little tasty morsels to honor the graduates which will hold up. and a small table with fresh fruit and cheese(yes, CHEESE!!!) and perhaps some finger sandwiches/banh mi. and maybe a sushi platter. Flavored tea and sparkling Italian style soda beverage. Mark is telling me you will be paid for the function day. I would be willing to offer significant points for this as well to others who may need make up points so we have enough help. Give me a call one way or the other. I want it to be nice for the graduates and their families.
